The Wonderful World of the CrockPot

Ok the greatest secret weapon of quick fast easy week night dinners... THE CROCK POT!

L-O-V-E it.

It's as easy as set it and forget it. If you can get over leaving it plugged in and on all day it'll be you're best friend.

The first easy dish I made was:

Chicken and Wine

I use chicken tenderloins - like 10 of them. Put in the crock pot with 1/2 cup sour cream, 1 can cream of chicken (or mushroom whichever you prefer), 1/2 cup of white cooking wine. Cook on low while you're at work and serve with rice. You can double the sauce recipe to make it more "saucey" which is what we like. Also you can add S&P or whatever spice you want too. Sooooo easy! its a staple at our house.

Also

BBQ Roast Pork - YUMMMMMM

1 3lb pork shoulder
1/2 cup of water
3 T vinegar
2 T Worcestershire sauce
1 t ground cumin
2 cups BBQ sauce

Trim fat from meat; cut if necessary to fit into 3 1/2 - 4 quart slow cooker. Stir together water, vinegar, worcestershire, and cumin and pour over meat in crock pot. Cover and cook on high for 5-6 hours or low for 10-12 hours. Once cooked, remove the meat from the crockpot. Discard the cooking liquid. Using two forks, shred the pork and then return to cook. Coat with BBQ sauce and cook for another 30 minutes.

Serve on rolls.

I have made the same recipe, but substituted beef brisket for the pork.
